How To Make Pineapple Crumble

1. Prepare your pineapple

You can use fresh or frozen pineapple here, but just make sure it’s as sweet as you can get it because it makes all the difference to how ‘pineapply’ your crumble will taste. It’s always the sweet and sticky pineapples that give you the best flavour, but do as best as you can on this front.

Chop your pineapple into bitesize pieces and add it to your oven-proof dish. If using frozen pineapple, leave to defrost beforehand thoroughly. You now need to add around half a cup of water and a little maple syrup and mix into your pineapple. Squash around half of your fruit down with a fork to release the natural juices.

2. Prepare your oaty topping

To make your crunchy crumble topping you simply add the rest of your maple syrup and the cinnamon to your oats and stir in thoroughly. This leaves you with a delicious and aromatic crumble topping that needs no fats to combine. The maple syrup works as the perfect binder instead of using fats, and tastes just as good, if not better, once baked.

Place blobs of your crumble mixture over your pineapple base and even out with the back of a fork. Be careful with this process and try to get coverage over all of your pineapple.

3. Bake

Bake your crumble in the middle of your oven on medium-high heat until dark golden brown.

Equipment

  • Mixing bowl
  • Wooden spoon
  • Fork
  • 8-10 inch, round oven proof dish

Ingredients
  

  • 550 g fresh pineapple chopped into very small and some bigger pieces. Try and find a super sweet and juicy pineapple if you can.
  • 200 g rolled oats Use chunkier steel cut oats for the best texture
  • 7 Tbs maple syrup
  • 2 heaped tsp cinnamon powder
  • ½ cup water

Instructions
 

  • Pre-heat your oven to 180C (356F)
  • Add your chopped pineapple to an oven proof dish with a rough diameter of around 8-10 inches.
  • Mix your water and 2 Tbsp of your maple into your pineapple and gently mix until thoroughly combined.
  • In a separate bowl mix together your oats, the rest of your maple, and cinnamon with a wooden spoon until well combined. Your oats will start to clump together a little and that's fine.
    With a spoon, blob your oat mix little by little over your pineapple as evenly as possible. Use a fork to spread it out so that you have full coverage of your fruit.
  • Bake for roughly 25-30 minutes in the middle of your oven. You want the finished crumble to be a dark caramel colour on top to be cooked properly.
  • Enjoy on its own or with some homemade vanilla nice-cream, vegan cream or whip.
