- 550 g fresh pineapple chopped into very small and some bigger pieces. Try and find a super sweet and juicy pineapple if you can.
- 200 g rolled oats Use chunkier steel cut oats for the best texture
- 7 Tbs maple syrup
- 2 heaped tsp cinnamon powder
- ½ cup water
Pre-heat your oven to 180C (356F)
Add your chopped pineapple to an oven proof dish with a rough diameter of around 8-10 inches.
Mix your water and 2 Tbsp of your maple into your pineapple and gently mix until thoroughly combined.
In a separate bowl mix together your oats, the rest of your maple, and cinnamon with a wooden spoon until well combined. Your oats will start to clump together a little and that's fine. With a spoon, blob your oat mix little by little over your pineapple as evenly as possible. Use a fork to spread it out so that you have full coverage of your fruit. Bake for roughly 25-30 minutes in the middle of your oven. You want the finished crumble to be a dark caramel colour on top to be cooked properly.
Enjoy on its own or with some homemade vanilla nice-cream, vegan cream or whip.
